Rangeen Paneer

Recently there has been a lot of writing on genetically modified vegetables and how harmful they are for health. I have been very worried about the effects of these on our health. Infact just a couple of days ago my father met a leading botanist of India who is conducting various studies on GM food. He told my father that he would like to spread the following message. Firstly completely avoid eating tomatoes and brinjal. Secondly while cooking cabbage or cauliflower boil them in salt water and discard the water. Also ensure while eating cabbage to peel off multiple layers of the leaves before consuming. Now this put a real concern in my mind. I was almost using tomatoes for all my cooking. So then I started to make dishes eliminating the tomatoes.

Here I would like to share the recipes that I prepared without tomatoes:

This is a nutritious paneer dish that I learnt to prepare from my mother in law. It goes well with rotis or paratha or chappati.

Ingredients:
250 gms fresh paneer (cottage cheese)
2 onions
1 capsicum
2 carrots
1tsp ginger paste
1 cup milk
1 teaspoon maida
salt according to taste
oil 2 tbsp

Cut onions into small squares, chop carrot into small thin slices, cut capsicum into squares (like onion)
In a kadai heat oil a kadai and add onions. Fry them till transparent and add the ginger paster and fry for 2 mins.
Now add the carrot and fry for sometime. Reduce flame and cover and cook till carrots are done.
Now add the capsicum fry for sometime.
At last add the fresh paneer and mix.
Then pour in the milk and add salt. let the milk simmer.
Mix the maida in cold milk and add so that the consistency of the milk becomes thicker.
Serve hot with Indian bread of your choice
